Banana Walnut Loaf

Banana Bread

I always have a story to relate on my home cooked meals. She does not eat bananas. Maybe because, while she was growing up, she ate banana everyday, even before lunch.

But I love the aroma of bananas emanating from the oven. So I dared to bake this, and see if she will eat it.

This recipe was given by my former office mate Linda and I do not know where she got this. I am sharing this with you, and I did some modifications.

Ingredients:

2/3 cups butter or margarine
1 1/3 cups sugar
2 whole eggs
1 1/2 cups mashed bananas (BTW, it took 5 days for my bananas to ripen)
2 3/4 cups flour (I use half regular and half whole wheat)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup sour cream ( I use buttermilk)
1 cup chopped walnuts

Procedure:

Cream butter and sugar until light and fluffy. The Kitchen-Aid Stand Mixer comes in handy! Use the flat beater.  Add eggs and bananas and beat until well blended.  Sift together dry ingredients. Add alternately sour cream and flour mixture to the banana mixture, stirring just to blend.  Stir in walnuts.

Spoon batter into 9x5x2-3/4″ loaf pan, which has been greased and floured on the bottom only. Bake at 350 degrees F for 1 hour and 15 minutes or until done. (Insert toothpick, if it comes out clean, then its done).  Let stand in pan on cooling rack for 20 minutes. Remove from pan and cool thoroughly.

N.B. I don’t know why, but every time I make this, I can split the batter in two loaf pans. Well, I brought the extra loaf to work, and gave it Steph, who celebrated her 40th birthday!
