Ingredients:
8 pieces boneless chicken tenders
4 tbsp olive oil
4 tbsp lemon juice, freshly squeezed
3 cloves garlic, pressed (I used 6)
1 tsp dried oregano
Directions:
1) Mix all ingredients in a bowl and marinate chicken.
2) Toss to coat
3) Cover bowl and refrigerate for at least 30 minutes
4) Remove chicken and discard marinade
5) Grill or broil until chicken is done
Traditional: Meat is threaded in skewers. We did not thread ours.
This dish is great as is, or over rice pilaf. Recipe for rice here.
