INGREDIENTS
3 tablespoons oil
1/2 pound ground meat
1/2 pkg hard tofu, diced
1 pc. carrots diced
1 stalk green onions diced
1/4 cup toasted pine nuts
3 tablespoons chopped onions
1 teaspoon minced garlic
4-5 leaves iceberg lettuce
SPECIAL SAUCE
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons catsup
1 tablespoon lemon juice
1/8 teaspoon sesame oil
STIR FRY SAUCE
2 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon rice wine vinegar
DIRECTIONS
To prepare the special sauce, dissolve sugar in water in a small bowl. Add soy sauce, rice wine vinegar, catsup, lemon juice and sesame oil. Mix well and refrigerate until you’re ready to serve.
Brown meat in wok and saute onions and garlic with oil. Add tofu and carrots. Combine the soy sauce, brown sugar, and rice vinegar together in a small bowl for the stir fry sauce. Add the stir fry sauce to the pan and saute the mixture for a few minutes. Add the green onions and the toasted pine nuts. Mix well.
Serve it in the lettuce cups. Top with Special Sauce.

Yummo! We have pinon trees in our own yard and harvest the nuts. We also hike here in the mountains during the fall to harvest them, too. They are very expensive in the store as they tend to not produce well every year. About every 4 years the pinons in our area go a little NUTS and produce more than even the animals can eat. hehe!
I’ll have to try that recipe. I think I’ll leave out the ground beef and use romaine lettuce instead, but leave everything else the same. Your pictures were terrific. Everything looked a little bit NUTTY!
